The story of Domaine Hubert Lamy began with Hubert Lamy, who, after gaining valuable experience from his father over many years, decided to create Domaine Hubert Lamy in 1973. In the early days, the estate only owned a few hectares, mainly dedicated to regional appellations.
However, from the 1990s onwards, the estate entered a phase of intense development. New vineyards were acquired or leased, expanding the range of terroirs farmed. An important decision taken by Hubert Lamy was to replace plots previously planted with Pinot Noir with Chardonnay, believing that the soils were better suited to this grape variety.
In 1995, Olivier Lamy joined his father on the estate. Then, in 2005, Karine joined Olivier to take charge of the administrative and commercial aspects of the estate, contributing to its expansion and renown.
Today, Domaine Hubert Lamy covers 18.5 hectares, with a majority of Chardonnay (85%) and a portion of Pinot Noir (15%). It produces a range of 20 appellations and around 100,000 bottles a year, exported to 33 countries worldwide, testifying to the success and international recognition of the quality of the wines produced by the estate.
Olivier Lamy is Hubert Lamy's son and a member of the family that owns Domaine Hubert Lamy. He joined the family business in 1995 after completing his studies in winemaking and viticulture. Olivier brings new ideas and techniques to the domaine, contributing to its development and growing reputation.
The terroir of Domaine Hubert Lamy, located in the southern part of the Côte d'Or in Saint-Aubin, is characterized by mineral-rich limestone soils from different geological layers.
Côte de Beaune vineyards are planted mainly with Pinot Noir for red wines and Chardonnay for white wines. The limestone terroir of the Côte de Beaune is ideal for the Chardonnay grape variety, whether on the upper or lower slopes.
The limestone soils favor good drainage, while the relatively cool climate enables the grapes to retain a lively acidity and freshness. As for red wines, the limestone soils help produce wines with fine tannins and good ageing potential.

Domaine Hubert Lamy has initiated a new evolution in Burgundy. Before the appearance of phyloxera in the 19th century, vines were grown at high density, i.e. 30,000 vines per hectare. This technique, the fruit of observation and experience, created beneficial competition for the vines and their root systems. Domaine Hubert Lamy, under the direction of Olivier Lamy, is renowned for producing exceptional wines, including the Chassagne-Montrachet Premier Cru, Les Macherelles and Saint-Aubin Premier Cru Clos de la Chatenière Vieilles Vignes appellations, which are among the great wines of Burgundy. With a much more moderate use of barrels today than in the early days, he produces wines with a dense texture and deep substance that are destined for laying down. He does little racking of his juices in order to limit the amount of sulfur, while his long maturation periods slowly give his wines a patina.
Hubert Lamy, accompanied by his son Olivier, has begun to develop parcel-based cuvées on Saint-Aubin's best 1er cru climats, such as Murgers des Dents de Chien and En Remilly, as well as in the Gamay hamlet with Clos de La Chatenière. By identifying parcels worthy of separate vinification, the domaine has been able to fully express the richness of its terroirs, offering remarkable alternatives to the wines of Chassagne and Saint-Aubin.
To optimize the quality of its wines, the domaine has adopted prolonged ageing in ideal conditions of cool, damp cellars. This method preserves the wines' internal energy and contributes to their exceptional ageing capacity. This approach has earned the domaine praise from the Revue du Vin de France, which has hailed Olivier Lamy's work as an ambassador for Saint-Aubin wines, reinforcing the reputation of this still underestimated appellation.
