#PROPERTY: History & Terroir
Dom Pérignon House
Champagne Dom Pérignon is distinguished by a singular approach in the world of champagne: the vintage.
Unlike most major champagne houses, which prefer to produce their Brut Sans Année (BSA), reflecting the house style consistently from one year to the next, Dom Pérignon makes the bold choice to vintage each champagne. This practice highlights the specific characteristics of each year, creating unique and authentic cuvées.
The bold choice to offer exclusively vintage champagnes sets Dom Pérignon apart in the champagne industry. Indeed, in the sparkling world of champagne, around 95% of the wines produced are Brut Sans Année (BSA) cuvées, characterized by their consistency of style from year to year.
However, Dom Pérignon has chosen to stand out from the crowd by highlighting the uniqueness of each year. This means that Dom Pérignon's Chef de Caves faces an exciting annual challenge: to create a unique vintage that perfectly captures the essence of that particular year. To do this, he must take into account the climatic conditions of the harvest year and the character of the grapes harvested.
This dedication to the authentic expression of each vintage makes Dom Pérignon a truly avant-garde champagne house. Each bottle becomes a time capsule, encapsulating the history, climate and personality of its year of creation. While preserving Dom Pérignon's distinctive style, each vintage offers a unique experience, capturing the very essence of the moment of its harvest. This courageous approach confirms Dom Pérignon's exceptional status in the world of champagne, where innovation and the quest for authenticity are core values.
Dom Pérignon Manifesto
The key element of this approach is the "Manifesto Dom Pérignon," a precise text that frames every step in the process of creating these prestigious wines. This meticulous documentation ensures that the House's guidelines are followed to the letter, from the vine to the bottle. This gives Dom Pérignon a resolutely transparent and rigorous approach to winemaking, guaranteeing consistent quality at every stage of production.
History of the Dom Pérignon estate
Dom Pérignon, the originator of champagne
The history of Dom Pérignon is rooted in the fame of the monk Pierre Pérignon, nicknamed Dom Pierre Pérignon, who was procurator at Hautvillers Abbey in 1668. It was thanks to him that the Champagne method evolved into what we know today. He is considered the spiritual father of champagne.
Although the reputation of Dom Pierre Pérignon, the Benedictine monk who invented Champagne, dates back to the 17th century, it was not until 1921 that the first cuvée bearing his name, Dom Pierre Pérignon, was produced, leaving only Dom Pérignon.
Dom Pérignon's history spans more than two centuries, since it was founded in 1743. It is one of the oldest producers of champagne, testifying to its long tradition in the art of creating exceptional sparkling wines.
Between 1990 and 2009, Richard Geoffroy declared 15 different Dom Pérignon vintages. He is also behind Les Plénitudes, Dom Pérignon's own concept of offering champagnes that have reached a particular stage of maturation at different times, in order to follow their evolution as they age. Richard Geoffroy has made a major contribution to Dom Pérignon's artistic development, encouraging exceptional collaborations both in the world of gastronomy and with personalities such as Lenny Kravitz, David Lynch, Jeff Koons and Lang Lang.
On January 1, 2019, Dom Pérignon entered a new chapter in its history. Richard Geoffroy solemnly passed the torch to Vincent Chaperon, who joined Dom Pérignon in 2005. After 14 harvests and years of close collaboration with Richard Geoffroy, Vincent Chaperon is now responsible for embodying both the past and the future, the heritage of Dom Pérignon and the continuity of the company.
After Dom Pérignon was acquired by LVMH, Vincent Chaperon joined the House in 2005, before taking over the reins on January 1, 2019. His role is to perpetuate the history of Dom Pérignon by preserving the heritage of existing vintages while creating new legendary champagnes. During this period, he will continue to work closely with Richard Geoffroy, who had been the House's Chef de Caves for 28 years. For Richard Geoffroy, the fundamental values guiding the Dom Pérignon story are rigor, intuition, observation, understanding, knowledge and respect. This story continues to write exciting new chapters in the world of champagne.
Moët & Chandon's role for Dom Pérignon
Moët & Chandon has played a key role in Champagne Dom Pérignon's rise to fame, investing heavily to ensure the constant perfection of this vintage wine. In 2005, it made a strategic decision to sell a portion of its vineyards in the Aisne region, and then use the funds generated to acquire land in the Marne region. This move was aimed at increasing Dom Pérignon production by concentrating more on Chardonnay and Pinot Noir grapes, while preserving a vast vineyard. Despite the upheavals in the Champagne industry, Dom Pérignon remains extremely popular, and retains its status as the luxury wine of choice. It will continue to accompany Champagne lovers on many special occasions, perpetuating its heritage of quality and elegance. Moët & Chandon has played a crucial role in maintaining the excellence of Dom Pérignon, making it one of the world's most prestigious cuvées.

From the majestic Montagne de Reims to the luminous Côte des Blancs, via the picturesque Vallée de la Marne, Dom Pérignon draws its inspiration and its grapes from the most prestigious terroirs in the Champagne region.

Each parcel of vines, with its own particularities in terms of soil, climate and grape variety, contributes to creating a range of champagnes of remarkable depth and complexity. These cuvées go through three distinct stages, known as "Plénitudes," which are as many chapters in the evolution of the wine:
Dom Pérignon Vintage:This cuvée is marketed some 9 years after the initial vintage. At this stage, it already shows notable aromatic complexity, but still has significant ageing potential.
Dom Pérignon P2: The second fullness comes after around 12 to 15 years of aging. At this point, the cuvée evolves even further, developing deeper, more complex flavors and aromas. This is a stage when the champagne achieves a remarkable balance between freshness and richness.
Dom Pérignon P3: The final plenitude, Dom Pérignon P3, is released after around 25 years of maturation. This cuvée is extraordinarily rare and exceptional. After a quarter of a century of ageing, it has reached an unequalled level of maturity and complexity. It reveals an aromatic richness and depth of taste that place it among the world's most prestigious champagnes.

Dom Pérignon vintages
Another fundamental principle of Dom Pérignon is the complexity of its champagnes, a complexity that results from slow maturation. Time is a key element in the Dom Pérignon equation. While the freshness of the fruit is preserved, the aromas and textures develop over time without suffering the effects of oxidation.

What's more, Dom Pérignon boasts an exceptional vineyard, with over 1,200 hectares of vines classified as Grands Crus and Premiers Crus, from the finest terroirs in Champagne. Don Pérignon, Dom Pérignon, Dom Pé, Dom Péri, Moine ? Blanc de Blancs?
The correct name is Dom Pérignon, after the monk Dom Pierre Pérignon, who pioneered the méthode Champenoise. The name Dom Pé is used by lovers of this legendary Champagne!
The second of Dom Pérignon's principles is the creation of a blended Champagne. There are no single-varietal Champagnes. The Chef de Caves' mission is to bring terroirs together, rather than dividing them up, so that together they can play a unique composition, like an orchestra.
